Our orchard is home to more than 20 apple varieties. Each one is chosen for its unique character, history, and contribution to great and flavourful cider. From vibrant crabapples bursting with acidity to rare heritage cultivars rich in tannins, every apple we grow plays a role in shaping the flavours you enjoy at Cambium.

We cultivate a diverse collection of fruit, including classic eating apples, traditional European cider varieties, and long-forgotten heirloom apples once prized for their complexity. Grown organically and harvested by hand, these apples are pressed at peak ripeness to create expressive, orchard-driven ciders.
