Cidermaker Notes: Planted in the 80’s amongst our McIntosh trees for their blossoms to promote cross-pollination, we use these bright little acid bombs for adding tannin, brightness, and flavour to our Modern cider. The first apples to be picked and pressed on our farm, they are a herald of the harvest to come (and time to tune up all the press equipment!)
